A NATIVE NEW ORLEANIAN’S PASSION FOR FOOD

My quest for the perfect steak began in college, while at Tulane University, when my roommates and I would save just enough cash for that perfect meal. After college, we began our lives and careers in different cities across the U.S., but our hunger for the perfect steak never died. We planned annual vacations around a new steakhouse or restaurant we wanted to experience. This passion allowed me to keep in touch with some of my closest friends throughout the years, but it lead to a mounting frustration – Why can’t I buy a great steak with the same quality and consistency found in 5 star restaurants? I continued to search out and enjoy great restaurant meals, but my frustration in finding an exceptional cut of meat for home cooking continued to grow. As the saying goes, most great ideas come from a personal problem, and so my pursuit for the perfect steak evolved into what is now known as Rare Cuts®.

My first task when starting my business was to find those places where I could get a consistently high quality cut with great flavor. A delicate balance of breed selection, innovation, integration of animal behavior, and knowledge of proper handling techniques allows a steak to be that elusive “perfect cut.” After researching and visiting ranches and farms from California to New York, I established strategic sourcing partnerships to satisfy the most critical of foodies. I now had the sources, but who could I trust to produce consistently perfect cuts? After all, the act of meat production is a fine art, not to be taken lightly. After speaking with every ranch, farm, chef and industry insider, finding that partner was simple – Natco Food Service, a locally-owned, family business, managed by three generations of culinary experts. They are an industry leader that services the finest restaurants and hotels in the New Orleans area.

And so began Rare Cuts®.

In August of 2010, I opened my first retail shop in New Orleans, and now sell out of three locations. We’ve had tremendous, initial success by producing only the best selections available, and catering to the demanding New Orleans meat lover. I look forward to becoming an integral part of kitchens and backyards across the country, helping everyone turn their kitchen into a 5 star steakhouse.
