Whatever your reason, this fresh, cool, and light salad is the perfect fix for the woes of a southern summer.
Mango balsamic dressing
*Amounts are approximate depending on the size of salad you want
First, start by cutting your watermelon into roughly 3/4 inch thick slices. Thinly coat your slices in olive oil and salt and then grill for 2 minutes on each side. Chill as desired in the fridge.
Toss the arugula in the mango balsamic dressing. Dice your chilled watermelon and add it into the mix, along with a small handful of blueberries.
Crumble the feta cheese over the top and drizzle more dressing to taste.
Simple. Refreshing. Perfection.
